Vegan Cookie Dough & Brownie Energy Bites

So, if you’ve already stepped into the vegan scene or have been to basically any kind of organic store, little date-sweetened energy balls like these are probably old news for you. Bliss balls, energy bites, date balls, … there are many names for these raw and date-sweetened treats. And despite the ingredients and flavor combinations being almost endless, they don’t necessarily require a lot of different ingredients and are therefore still pretty easy to make and adjust to your personal liking! Some dried dates, nuts and oats and you’ve got the base for your snack covered.

Whether you’re in the mood for matcha flavor, cocoa, vanilla or coconut - the vegan influencer of your choice has probably already created the matching energy ball recipe to it. And rightfully so! I, too, am a huge fan of combining various ingredients with sticky-sweet dates and then rolling them into snack-sized bites. So it may come to no surprise to you now that I’ll also share some of my favorite energy ball combos here on the blog. Say hi to cookie dough and brownie energy bites, everyone! Basic, but worth it!

Vegan Cookie Dough & Brownie Energy Bites

Ingredients:

for the cookie dough bites:

  • 60g soft pitted dates (I’d recommend using medjool or sukkari dates!)

  • 35g oats

  • 3 tsp almond butter

  • 1/2 tsp salt

  • 1/2 tsp vanilla

  • some vegan dark chocolate

  • a few tbsp plant milk (optional / if needed while blending)

  • some matcha powder, cocoa or shredded coconut for decoration (optional)

for the brownie bites:

  • 60g soft pitted dates (again I’d recommend medjool or sukkari)

  • 40g nuts of choice (hazelnuts, walnuts or almonds work great here!)

  • 3 tsp unsweetened cocoa powder

  • 1/2 tsp salt

  • 1/2 tsp vanilla

  • some more cocoa powder or chopped nuts for decoration (optional)

Instructions: 

  1. If your dates are rather dry and not soft, let them soak in some hot water for about 30mins before to using them. Once the dates have softened, drain the water and precede.

  2. For the cookie dough bites you’ll first want to turn the oats into oat flour using a blender. Then add the remaining ingredients except for the dark chocolate and decoration ingredients and blend until you’ll get to a soft, formable consistency. You may need to add a few tbsp of plant milk in case the mixture is too dry.

  3. Chop your dark chocolate, stir into the cookie dough mix and roll it into small balls. Coat the balls in some shredded coconut, matcha or cocoa powder and let them firm up in the fridge.

  4. To make the brownie bites, add all of the listed ingredients into a blender and blend until it forms a soft, formable mix.

  5. Roll the mixture into small balls, coat them in some more cocoa powder or chopped nuts and let them firm up in the fridge as well.

  6. Store both energy bites in the fridge or freezer* and enjoy!

*Notes:

  1. I even prefer to store the energy bites in the freezer because they’ll keep nearly forever and like that you’ll always have a snack on hand!
