Vegan Chocolate French Toast
French Toast! I’ve to admit, I was skeptical towards this breakfast classic at first, because if there’s a thing I’m not a fan of it’s soggy bread. You may or may not know it already but I live for the crunch. But after trying it now, I am not opposed to having some luscious slices of bread topped with a generous amount of maple syrup for breakfast anymore to be honest.
I think you just have to separate it from the concept of “bread” or “toast” completely. If you ask me, it rather belongs in the family of waffles and pancakes. Maybe even gravitating towards some kind of breakfast cake territory. And even if that may sound weird, it did catch me like that. So maybe this chocolate-version will catch you too?
so here’s the recipe for this:
Vegan Chocolate French Toast
Ingredients:
for the french toast:
2-4 slices of bread*
1 banana
1 tbsp chia or flax seeds
1/2 tsp vanilla
1/2 tsp cinnamon
1-2 tsp cocoa powder (depending on how strong you want the flavor to be!)
a small pinch of salt
1/2 cup plant milk (about 100g)
some coconut sugar (optional)*
some vegan butter (or coconut oil)
for the topping:
plant based yogurt
fresh blueberries
chopped hazelnuts (or nuts of choice)
maple syrup (or other syrup of choice)*
some more cocoa powder
Instructions:
To a blender add the banana, flax seeds, vanilla, cinnamon, cocoa powder, salt and plant milk. Blend everything until you get a liquid but slightly creamy consistency. Then let it thicken for a few minutes.
In the meantime, cut your bread into 1,5-2cm thick slices and heat up your vegan butter in a pan.
When the butter is sizzling, dip your bread slices into the banana-cocoa-mix, let the excess drip off and fry them on both sides for a couple of minutes until golden brown. (You can also sprinkle some coconut sugar over both sides of the slices! That way the sugar will caramelize while frying and you’ll get a sweet and slightly crispy outside!)
Once the slices are golden brown and done frying, serve them right away and top them with the plant based yogurt, berries, nuts and cocoa powder.
Lastly, pour over a generous amount of maple syrup and enjoy!
In Germany we call this dish “poor knights”. Love it.
*Notes:
The banana-cocoa-mix will be enough for about 4 thick slices of bread. You can use whatever bread you like, even day-old yeast dough braids or babkas work really well! Traditionally (and while shooting this recipe) I used some day-old white bread from the bakery. I’d only suggest to not use those pre-packaged / store-bought sandwich breads, as they have rather thin slices most of the time and are therefore more prone to fall apart while frying!
Instead of coconut sugar, you can use any other granulated sugar of choice!
Because the French Toasts are mainly sweetened with banana, they themselves won’t be as sweet! That’s why I’d highly recommend to serve them with a generous drizzle of maple syrup, as it will really add the perfect touch to them!
